Vegetable Soup: A Comforting and Healthy Dish



Ingredients

15-20 mins

  1. 1/2 Cup Peas

  2. 5-7 Mushrooms roughly chopped

  3. 1/2 cup Sweet Corns

  4. 1/2 Carrot minced

  5. 1 cup Broccoli florets (small)

  6. 1 Spring Onion minced

  7. 1/4 cup chopped Zucchini

  8. 2-3 tsp roughly Chopped Garlic

  9. 1 tsp Grated Ginger

  10. 1/2 tsp Black Pepper Powder

  11. To taste Salt

  12. 1 tsp Mixed Herbs

  13. 2 tsp Fresh Coriander leaves chopped

  14. 2 tsp Corn flour

  15. as needed Water

Cooking Instructions

Step 1

Heat 1 tbsp of olive oil in pan. Add chopped onions, garlic and sauté them for few seconds on medium heat. Then add all the chopped veggies.


Step 2

Sauté the veggies for a minute or two. Add some salt, black pepperand chopped ginger.


Step 3

Add 2-3 cups of water. Add some mixed herbs. Let it boil.


Step 4

Cover it with lid for atleast 5 mins (medium low heat). After then you can add some corn flour slurry (1 tsp + 2 tsp of water), this is optional. Mix well and again cover it the lid for 1-2 mins (low flame).


Step 5

Vegetable soup is ready. Serve hot.
