Ingredients

Sabudana, soaked overnight
1 Capsicum, finely chopped
2 Tomatoes, paste
1 Potato, diced (small)
1 tsp Cumin seeds
1 Grated carrot
1/2 cup Peanuts
1/2 tsp Red chilli powder
1/2 tsp Garam masala
1 tbsp Coriander powder
1/2 tsp Black Pepper Powder
1 tsp Turmeric powder
Fresh Coriander leaves, finely chopped
Salt as per taste

Cooking Instructions
Step 1
Soak the sabudana overnight. It's always best if you soak it overnight.
Step 2
Rinse the sabudana under water atleast 3-4 times until water turns clear to get rid of the starch.
Step 3
Heat oil in a pan on medium heat. Once the oil is hot, add peanuts and sauté them for 1-2 minutes. Once it's done, take them out and keep it aside.
Step 4
Add cumin seeds and let them sizzle for few seconds. Then add diced potatoes and cook for 2 or 3 minutes.
Step 5
Add the tomato paste and little bit of salt. Mix well.
Step 6
Now add the sabudana, grated carrot, salt, red chilli powder, turmeric powder, coriander powder, garam masala, Black pepper powder. Mix well.
Step 7
Cook for few minutes. Stir it for 2-3 times. Do not cook it for a long time else it will become sticky.
Step 8
Remove pan from heat. Add fresh coriander leaves and toss them well.
Step 9
Your Sabudana Khichdi is ready. Serve hot with curd.
